Jalapeño Popper Potato Salad

This Jalapeño Popper Potato Salad is the dish that's gonna have your neighbors asking you for the recipe while they're still chewing. We're talking crispy bacon, fresh jalapeño heat, sharp cheddar, and a cream cheese dressing so smooth it'll make you wanna pull up a lawn chair and just sit with it for a minute.

The block doesn't need to know all your secrets — but I'll tell you this one. That cream cheese in the dressing? That's the move. That's what gives it that classic popper texture that hits different from every basic potato salad you've had at every basic cookout.

The Base Ingredients:

  • 1.5 lbs little yellow potatoes 

  • 6 slices thick-cut bacon, fried crisp and crumbled

  • 3 large jalapeños (2 seeded and diced, 1 thinly sliced into rounds for garnish)

  • 1 cup sharp cheddar cheese, shredded

  • 3 green onions, thinly sliced

The "Popper" Dressing:

  • 1/2 cup mayonnaise

  • 4 oz cream cheese, softened (this is the secret to that "popper" texture)

  • 1/2 cup sour cream

  • 1 tbsp apple cider vinegar

  • 1 tsp garlic powder

  • Salt and black pepper to taste

Instructions:

  1. Boil the Potatoes: Place the Little Potatoes in a large pot of salted water. Bring to a boil and cook for about 12–15 minutes until fork-tender. Drain and let them cool slightly. Slice the larger ones in half, but leave the tiny ones whole for texture.

  2. Make the Dressing: In a medium bowl, whisk together the softened cream cheese, mayo, sour cream, vinegar, and garlic powder until smooth. If it's too thick, add a teaspoon of water or pickle juice.

  3. The Mix-In: In a large bowl, combine the warm potatoes, diced jalapeños, crumbled bacon, shredded cheddar, and green onions.

  4. Fold & Chill: Pour the dressing over the potato mixture. Fold gently so you don't smash the potatoes.


Garnish: Top with the reserved jalapeño rounds and an extra sprinkle of bacon or cheese.
