The Only Pollo Asado Marinade You'll Ever Need
If your pollo asado is just taco seasoning and hope, we need to talk. Real pollo asado gets its color from achiote, its punch from citrus, and its depth from garlic and cumin. This is the marinade I use when I want chicken that tastes like it came off a real asador — including in my Arizona Twinkies.
What you need (covers 2–3 lbs of chicken)
½ cup fresh orange juice
¼ cup lime juice (2–3 limes)
3 tbsp achiote paste
6 cloves garlic
1 tbsp Mexican oregano
2 tsp cumin
2 tsp kosher salt
1 tsp black pepper
¼ cup neutral oil
Optional: handful of cilantro, 1 jalapeño if you like heat
How to make it
Blend everything until smooth. That's it — no cooking, no fuss.
Pour over your chicken in a bag or bowl. Make sure every piece is coated.
Marinate at least 4 hours. Overnight is the sweet spot. Don't push past 24 — the citrus will start turning the texture mushy.
Grill over medium-high heat until charred at the edges and cooked through.
a Few Tips
Thighs over breasts, every time. More fat, more flavor, way more forgiving if your grill runs hot.
Achiote stains everything. Don't wear white. You've been warned.
Make a little extra on the side if you want some for drizzling.
What to do with it
Tacos, burritos, bowls, quesadillas — or shred it and stuff it into jalapeños with Hatch chiles and cream cheese, wrap it in bacon, and call it an Arizona Twinkie. Just saying.
