They’re made to impress at any cookout—but easy enough to whip up on a chill weekend. Let’s get into it.
Ingredients
Ribs:
1 rack baby back pork ribs
2 tbsp avocado oil
Your favorite BBQ rub (Cookout Dust)
Chopped parsley (optional, for garnish)
Garlic Parmesan Mix:
1 cup grated Parmesan (fresh—not the green can)
¼ cup unsalted butter
6 cloves garlic, minced
1 tbsp fresh parsley, chopped
Pinch of red pepper flakes
Juice of 1 lemon
Directions
Prep the Ribs
Score the membrane on the back of the ribs, then slice into individual bones.
Toss the ribs in avocado oil and coat evenly with BBQ rub.
Let them sit at room temp while you fire up your smoker to 250°F.
Smoke (Round 1)
Place ribs directly on the smoker and cook for 1 hour.
Build the Flavor Bomb
Transfer ribs to an aluminum tray.
Add butter, lemon juice, garlic, Parmesan, and chopped parsley.
Cover the tray tightly with foil.
Smoke (Round 2)
Increase smoker temp to 325°F.
Cook covered for another hour until ribs are tender and juicy.
Finish & Serve
Uncover and spoon that garlicky parmesan butter all over the ribs.
Garnish with extra Parmesan and parsley if you’re feelin’ fancy.
Serve hot, messy, and proud.
