Sweet & Sticky Asian-Style Chicken Lollipops
If you’re looking to shake up your next cookout, these chicken lollipops are a showstopper. Tender drumsticks get trimmed into a “lollipop” shape, hit with a bold rub, then glazed in a sweet-and-sticky blend of soy, hoisin, brown sugar, and rice vinegar. The result? Juicy chicken with a glossy, candy-like finish that packs just the right mix of savory and sweet.
Ingredients
12 chicken drumsticks
2–3 olive oil
3–4 tbsp BBQ rub (Cookout Dust)
Glaze:
½ cup soy sauce
¼ cup hoisin sauce
¼ cup brown sugar (packed)
2 tbsp rice vinegar
1 tbsp honey
3 cloves garlic, minced
1 tsp fresh ginger, minced (optional but fire)
1 tsp sesame oil
Directions
Trim each drumstick to expose the bone.
Coat in hot sauce or oil, season generously with your BBQ rub.
Cook @ 375°F until 165°F internal (about 45 min).
In a small saucepan, simmer soy sauce, hoisin, brown sugar, rice vinegar, honey, garlic, ginger, and sesame oil.
Brush glaze all over lollipops.
Increase grill temp to 400°F and cook another 5–10 min, basting once more.
Pull when internal temp hits 180–185°F
Sprinkle with sesame seeds and green onions.
